NINE BEAN SOUP 
2 cups Nine Bean Soup Mix
2 quarts water
1 lb. diced or shredded cooked ham
1 large onion, chopped
3 cloves garlic, minced
1 quart canned tomatoes
salt and pepper, to taste
water or broth

Rinse beans, removing any debris.

In a large pot, cover with 2 inches of water. Soak overnight. The next morning, discard soaking water. Cover with 2 quarts of fresh water or broth. Add remaining ingredients.

Cover and bring to a boil. Reduce heat and simmer on low for 2 hours or until beans are tender.

Makes about 4 servings.
