ZUCCHINI BREAD 
3 eggs, beaten
2 c. sugar
3 c. flour
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
1 c. oil
2 tsp. vanilla
3 c. grated zucchini
3/4 c. nuts, chopped
3/4 c. coconut
2 tbsp. chopped lemon verbena

Cream sugar and eggs with salt. Mix four, cinnamon, soda and baking powder alternately with oil. Add vanilla, zucchini, nuts and coconut with verbena leaves. Bake for 1 hour at 350 degrees. Makes 1 large loaf or 3 medium.
