CARROT ZUCCHINI BREAD 
2 1/2 c. flour
1 c. whole wheat flour
1 tbsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 c. firmly packed brown sugar
2 eggs
1 1/2 c. buttermilk
2 tbsp. melted butter
Grated rinds of 1 orange + 1 lemon
1 c. shredded zucchini

TOPPING:

1 c. shredded carrots
Whipped cream cheese
Powdered ginger

Mix flours, baking powder, soda, salt and sugar. Add remaining ingredients. Stir until well blended. Bake 1 1/4 hours or until firm. Cool 5 minutes in pan and then remove. When cool, top with whipped cream cheese and a touch ginger added. Use 9"x5" loaf pan and bake at 350 degrees for 1 1/4 hours.
