MOCK SOUR CREAM - LOW
CHOLESTEROL
 
2 tbsp. skim milk
1 tbsp. lemon juice
1 c. low fat cottage cheese
1/4 tsp. salt

Place all ingredients in a blender and mix on medium-high speed until smooth and creamy. Use as a sour cream substitute. This sauce may also be added to hot dishes at the last moment. Or serve it cold, with the addition of flavoring herbs, as a dressing or a sauce for a mousse.
