ZUCCHINI STIR FRY 
2 med. zucchini, sliced 1/4" thick (unpeeled)
1 med. onion, chopped
1 clove garlic, minced
1 c. mushrooms, sliced
1 med. tomato, chopped
1/2 c. grated Parmesan cheese
Salt & pepper
1 tbsp. olive oil

Saute onion, garlic and mushrooms in olive oil in 10 inch skillet until soft. Add zucchini slices and tomato; cover. Simmer for 2-5 minutes, or until zucchini is tender but not mushy. Remove from heat and sprinkle with Parmesan cheese; cover and let sit for 1-2 minutes or until cheese is melted.
