LEMON PECAN CHRISTMAS CAKE 
1 lb. butter
1 lb. brown sugar
6 eggs
3 1/2 c. flour
2 tsp. baking powder
1 (2 oz.) bottle lemon extract
1 lb. chopped pecans
8 oz. candied cherries (red & green)
8 oz. candied pineapple

Mix in order given. Temperature 350 degrees. Time depends on whether you make these into 3 loaf tins or 1 huge tin, preferable angel food tin with hole in middle so heat can go through cake as it bakes. 3 loaf tin take about 1 1/2 hours at 350 degrees. Best to test with straw and if straw comes out not sticky or gummy it is done.
