BANANA BARS 
2 c. flour
1 1/3 c. sugar
2 tsp. baking soda
1/2 tsp. salt
1 c. mashed very ripe bananas (about 2 lg.)
3/4 c. vegetable shortening or salad oil
4 eggs
2 tsp. vanilla extract
1 tbsp. confectioners' sugar

Preheat oven to 350 degrees. Grease a 15 1/2 x 10 1/2 x 1 inch jelly roll pan. In large bowl combine dry ingredients. Add next 4 ingredients and beat until blended. Pour into prepared pan. Bake 20-25 minutes or until center springs back when lightly touched. Cool on wire rack. Sprinkle with confectioners' sugar. Cut into 2 x 1 inch bars.

Makes about 70 bars.

I made these tonight and I do like them, but I feel like they are missing something. Everyone says nuts. I would like to think there is more to bananas than banana bread. To me this is a delicious light and spongy cake like bar. Very moist and can be enjoyed warm with a scoop of french vanilla ice cream.

The powdered sugar sprinkle really sweetens this one. Would be a great with tea or coffee as well.
