NEW ENGLAND SPLIT PEA SOUP | |
1 lb. green split peas 2 qts. water 1 smoked ham bone 1 chopped onion 1 stalk celery, chopped 2 carrots, sliced Salt and pepper to taste Add ham bone and onion to water and bring to boil. Rinse dry peas, drain and add to water. Add rest of ingredients and boil slowly for 2 1/2 hours, stirring occasionally to keep from sticking. Remove ham bone at end of first hour and pick off pieces of ham and return to soup. Discard bone. Serves 4-6 people. Serve with Johnny Cake or Corn Bread. JOHNNY CAKE (over 100 years old) : 1/2 c. cornmeal 1 tsp. salt 1 c. scalded milk or boiling water Butter Add salt to meal. Stir in milk or water. Spread 1/4 inch deep in buttered shallow pan. Dot with butter. Bake 350 degrees until crisp. |
