ZUCCHINI, ONIONS, AND TOMATO
CASSEROLE
 
1 lb. zucchini in 1/2 inch slices
2 lg. onions, thinly sliced
3 tomatoes, peeled & sliced
1 bunch parsley, chopped
2 cloves garlic, minced
1 tsp. each dried thyme and rosemary
1/2 c. olive oil
2 tbsp. bread crumbs, finely ground
Salt & pepper to taste

Heat oven to 400 degrees. Grease casserole dish with olive oil, layer ingredients as follows: Zucchini, onions and tomatoes. Between each layer, sprinkle garlic, parsley and spices. Pour olive oil over the top of the casserole, sprinkle bread crumbs. Cover and bake for 30 minutes.
