DRUNK CHICKEN 
1 lg. chicken, cut up into serving pieces
1 can mushrooms stems & pieces
1 (8 oz.) can tomato sauce
3 cloves garlic, minced
1 lg. onion, sliced
1/2 c. white wine
1 (4 oz.) jar pimento
Salt & pepper to taste

Brown chicken in olive oil in large frying pan. Remove chicken to large cooking pot. Saute onions and garlic in oil until onion is limp, pour off excess oil. Add mushrooms, pimento, tomato sauce and wine. Simmer a few minutes. Pour sauce and chicken in large pot.

Simmer covered for 1-1 1/2 hours or until chicken is tender. I serve this with rice, French bread, salad or vegetables. Delicious meal. Make in the morning or the day before and reheat at meal time!
