EASY COCONUT PIE 
1 1/4 c. milk
1 c. Karo light corn syrup
3/4 c. buttermilk baking mix
1/4 c. butter
3 eggs
1 1/2 tsp. vanilla
1 can (3 1/2 or 4 oz.) flaked or shredded coconut

Grease 9 inch pie plate. Place first 6 ingredients in blender container; cover. Blend on low speed 3 minutes. Pour into pie plate. Let stand 5 minutes. Sprinkle with coconut. Bake in 350 degree oven 35 to 40 minutes or until knife inserted between center and edge comes out clean. Store in refrigerator. Makes 8 servings.
