ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. oil
2 tsp. vanilla
2 c. peeled and grated zucchini squash
3 c. self rising flour
1/2 tsp. cinnamon
1 c. nuts (optional)

Beat eggs, sugar, oil, and vanilla; add zucchini then flour and cinnamon. Add 1 cup nuts (more or less). Bake in 2 greased and floured loaf pans for 1 hour or until done at 350 degrees. Makes 2 loaves.
