INSTANT GOURMET VEGETABLE
CASSEROLE
 
2 (8 oz.) cans artichokes
2 (4 oz.) cans mushrooms
2 pkg. frozen spinach
3/4 c. sour cream
3/4 c. mayonnaise
Lemon juice
Salt to taste

Thaw spinach, squeeze out water. Drain artichokes, cut in halves or quarters. Drain mushrooms. Mix all ingredients together. Bake 1/2 hour, covered, at 350 degrees. Serves 12-14. Do NOT use marinated artichokes or mushrooms.
