OATMEAL COOKIES 
1 c. soft shortening
1 c. sugar
1 c. brown sugar
2 eggs
1 tbsp. grated lemon rind
3 tbsp. sorghum (if not available use molasses)
1 tsp. vanilla
1 3/4 c. flour
1 tsp. baking soda
1 tsp. salt
3 c. oatmeal

Use usual mixing procedure. Drop by teaspoonfuls on greased cookie sheet. Bake 350 degrees for 12-14 minutes.
