PEANUT CUP-O-SOUP
1 c. water or homemade chicken broth, divided
1 tsp. chicken bouillon granules, if using water
2 tsp. cornstarch
5 drops Tabasco or to taste
2 level tbsp. smooth peanut butter

In a microwave-safe mug, thoroughly stir together the 1/2 cup water, 2 teaspoons cornstarch, bouillon and Tabasco. Microwave on high for 1 1/2 to 2 minutes. Don't let boil over! Remove, stir well. Stir in the peanut butter and rest of the water or broth. Heat for 1/2 minute or until hot; don't let boil. Stir. Enjoy. This is a great pick-me-up!

George Washington loved a cream of peanut soup, simmered with cooked vegetables; perhaps cauliflower, celery, corn, sliced potatoes, and/or watercress.

OPTIONAL: QUICK CREAM OF PEANUT SOUP:

Replace the Tabasco with 1 teaspoon instant onion, replace the second 1/2 cup water with 1/2 cup condensed milk. Leftover vegetables to your taste.

Since microwave ovens vary in power, you may need to adjust your cooking time.
