QUICK SHRIMP SCAMPI 
1/2 c. butter
1 lb. fresh medium shrimp, shelled and deveined or frozen shrimp
1 tbsp. finely chopped onion
2 tbsp. chopped fresh basil or 1/2 tsp. dried basil leaves
1/4 c. grated fresh Parmesan cheese

Melt the butter in a large skillet over medium-high heat. Add shrimp and onion; cook and stir 3 to 4 minutes or until shrimp are lightly pink. Add basil; mix well. Sprinkle with Parmesan cheese. Serve over hot cooked fettuccine or angel hair pasta.

Serves 4.
