GRANDMA ELLIOTT'S CARROT CAKE 
2 c. sugar
2 c. flour
1 1/2 c. oil
3 tsp. cinnamon
4 eggs
1 tsp. baking soda
3 c. carrots, grated

Sift dry ingredients, add oil, mix well. Add eggs, one at a time, blend well, pour into well greased pan(s). This makes a 3 layer or 1 long layer cake. Bake at 325 degrees for 30 to 35 minutes.

CARAMEL ICING:

1/2 c. butter
1 c. brown sugar, firmly packed or white sugar
1/4 tsp. salt
6 tbsp. milk
3 c. powdered sugar

Melt butter in saucepan. Stir in brown sugar and add salt. Bring to a boil and boil hard for 2 minutes, stirring constantly. Remove from heat and add milk, stirring vigorously. Put back over heat and bring to a full boil again. Set aside to cool (about 20 minutes) until lukewarm. Stir in powdered sugar and beat until smooth. If frosting stiffens too quickly while speaking beat in a few drops of milk. Will frost 2 (8" or 9") layers.
