STRAWBERRY PRESERVES OR TOPPING 
1 c. frozen strawberries or fresh unsweetened
1 tsp. low-cal pectin
1 tsp. granulated sugar replacement

Place strawberries in top of double boiler; mash slightly. Cook until soft and juicy, crushing berries against side of pan. Add pectin and sugar replacement; blend thoroughly. Cook until thick. Can also use blueberries or raspberries.

MICROWAVE: Cook berries on HIGH 4 minutes; mash, add pectin and sugar replacement. Cook on HIGH 30 seconds. Yields: 2/3 cup. (2 tablespoons = 1/5 fruit, 7 calories)

Since microwave ovens vary in power, you may need to adjust your cooking time.
