SWEET RICOTTA PIE | |
1 1/4 lb. ricotta cheese 1/2 c. sugar 1 tsp. vanilla Rind of 1 lemon, grated 1 egg 1 egg white (save yolk for top) 1 pie shell, unbaked Place all ingredients in mixing bowl. With mixer at high speed, blend well. Pour into crust until level of edge of crust. (Do not heap.) Use remaining dough to make lattice strips for topping. Brush with egg yolk and bake in 350 degree oven for 40 to 50 minutes, until golden. Cool. Refrigerate any leftovers. |
