“POTATO CHEESE SOUP” IS IN:
NEXT RECIPE:  PRETZEL SALAD

POTATO CHEESE SOUP 
4 or 5 large potatoes
1 cup dairy sour cream
2 cans cheddar cheese soup
2 1/2 cups milk
salt and pepper
beef bouillon
garlic powder

Peel and cut potatoes into cubes. Boil potatoes until soft and drain potatoes. With potatoes in pan add soup and sour cream. Gently mix until blended. Add milk into potato mixture until combined liquid barely covers potatoes. Add salt, pepper, beef bouillon, and garlic to taste. Heat on medium heat until soup is warm enough to eat.

DO NOT BOIL.

Saltine crackers are a good compliment to this soup.

Made this soup many times, always great! This time made with 2lb. velveeta instead of cheese soup b/c all the stores around here always run out during the holidays. Turned out really well. Diced raw onions added at serving cut the salty flavor of the Velveeta. Was asked for the recipe.

I love this recipe and like to doctor it up a bit. I always use the velvetta or even colby jack shredded cheese or both. I add a little onion to potatoes while they cook or onion powder,carnation evaporated milk instead of reg milk for even extra rich flavor. Then I love to crumble bacon pieces or real bacon bits when it simmers for a little hickory smoke taste.

Awesome and simple! I used about 3 tsp. of bouillon, added a dash of cayenne pepper and a bit of colby jack at the end. Can't wait to make it again.

What a great recipe. Fast and east to make, everyone just loves it and asks for the recipe, I added carrots to give it color, and used fresh garlic, And I added bacon. Those were just personal touches tho.

Kudos, Lisa on a terrific soup recipe! I put in two Knorr brand beef bouillon cubes and that transformed this soup into something spectacular. I added more milk than required because it's going in the crockpot at work tomorrow for 10 people. Like Kathy, I have bacon bits (that I fried a little) - on the side though - so they can be added as a garnish. May try mashing the potatoes first for next time.

The jury is still out. I hope the flavor come out as it warms, for right now there is very little flavor. I added chicken bouillon, bacon and shredded sharp cheese. We'll see.
