BANANA SNACK CAKE 
1 c. butter
1 c. sugar
2 eggs
1/2 c. buttermilk
1 c. mashed bananas
1 tsp. vanilla
2 c. flour
1 c. quick rolled oats
1 tsp. salt
1 1/2 tsp. baking soda
6 oz. pkg. chocolate chips
1/2 c. chopped nuts

Substitute - 1 tablespoon vinegar plus milk to make 1 cup buttermilk.

Cream butter, sugar and eggs. Stir in buttermilk, bananas and vanilla; mix well. Stir in flour, oats, salt and soda; mix well. Stir in chocolate chips. Spread batter into a greased 13 x 9 inch pan. Sprinkle nuts on top. Bake at 350 degrees for 30-35 minutes.
