BANANA SNACK CAKE 
1 c. butter
1 c. sugar
2 eggs
1/2 c. buttermilk
1 c. mashed bananas
1 tsp. vanilla
1/2 c. chopped nuts
2 c. flour
1 c. quick rolled oats
1 1/2 tsp. baking soda
1/2 tsp. salt
1 c. chocolate chips or 1 c. blueberries

In a large bowl, cream the butter and sugar, beat in eggs. Stir in vanilla, bananas, and buttermilk. Combine flour, oats, baking soda and salt. Mix well and stir in the chocolate chips or blueberries and add to the creamed mixture. Spread batter in greased 9 x 13 pan and sprinkle top with chopped nuts. Bake at 350 degrees for 35 to 40 minutes.
