SPINACH CASSEROLE 
2 pkgs. frozen chopped spinach (defrost and squeeze out water)
1 can cream of potato soup
1/2 pt. sour cream (1 c.)
1/4 c. Parmesan cheese
Minced onion, bacon, mushrooms

Mix all ingredients and put into casserole. Top with cheese and if you like, bacon, cut up and fried.

In small casserole dish, cover and bake 350 degrees for 45 minutes.
