COCONUT TEA LOAF 
1 c. shredded coconut
3 c. flour
1 tbsp. baking powder
1 c. sugar
1/2 tsp. salt
1 egg
1 1/3 c. milk
1 tsp. vanilla

Start oven at 350 degrees and while oven heats toast the coconut in a shallow pan until it is dry and golden. Grease a medium size loaf pan. Sift flour, baking powder, sugar and salt together and stir in toasted coconut. Beat egg until foamy and combine with milk and vanilla. Stir thoroughly but do not beat. Pour into greased loaf pan and bake 70 minutes. Cool and slice thin and serve as is, or toasted.

Or use three 7 1/2 x 3 1/2 x 2 1/4 inch pans and bake at 350 degrees for 35 minutes.
