COCONUT PUMPKIN LOAF 
2 c. flour
2 c. sugar
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
2/3 c. flaked coconut
2 (3 1/2 oz.) pkgs. regular coconut pudding
5 eggs
1 1/2 c. vegetable oil
2 c. pumpkin

Mix together first 8 ingredients in a large mixer bowl. In another bowl, mix together eggs, oil, and pumpkin. Add egg mixture to the flour mixture. Divide batter into two greased loaf pans (8 1/2 x 4 1/2 x 2 1/2 inch), cover bottoms of pans with greased wax paper prior to filling. Bake at 350 degrees for 50 to 60 minutes or until tester comes out clean. Cool 10 minutes.
