STIR FRY AND VEGETABLES 
1 lb. lean beef (sirloin, top round or other tender lean meat), thinly sliced across the grain
1/2 c. soy sauce
1/4 c. sherry
1 c. milk onions, thinly sliced
1 c. celery, sliced diagonally
2 c. broccoli florets
2 c. broccoli, stems, peeled and thinly sliced
12 med. mushrooms, sliced
1/4 c. peanut or vegetable oil
2 sm. cloves garlic, minced
1 tbsp. corn starch
1 med. tomato, peeled and diced for garnish, optional

Toss beef in bowl with soy sauce and sherry. Cover and marinate for 30 minutes. Prepare vegetables; set aside. Heat oil in wok or wide frying pan over low heat. Add garlic and saute over high heat. Add onions, celery, broccoli and mushrooms. Cover and steam about 5 minutes. Mix marinade with corn starch and pour into pan. Heat to boiling. Cook for a few seconds until thickened. Turn into serving dish and garnish with tomato. Serve. Makes 4 servings. For 2 servings, half ingredients, for 8 servings, double the ingredients. Good served with fluffy rice or noodles. Hard rolls and fresh fruit.
