2 med. green or red peppers 1 1/2 lbs. round steak, tenderized 1/4 c. oil 1 tsp. sugar 1 tsp. chili powder 1/2 tsp. garlic powder 1/2 tsp. salt 1/4 tsp. pepper 10 lg. flour tortillas 2 tbsp. oil 1 (8 oz.) jar picante sauce 1 c. shredded Cheddar or Monterey cheese 2 (6 oz.) containers frozen guacamole, thawed 3/4 c. sour cream Mix 1/4 cup oil, vinegar, sugar, chili powder, garlic powder, salt, and pepper in ungreased baking dish. Place beef in dish; coat both sides. Cover and refrigerate, turning beef occasionally, for 2 hours. Wrap tortillas in foil and warm in 375 degree oven for 15 minutes. Remove beef from marinade and reserve marinade. Set oven broiler to 550 degrees. Broil beef for 8 minutes and turn. Brush with marinade and broil another 8 minutes. While beef broils, cook and stir onions and peppers in 2 tablespoons oil until crisp and tender. For each serving, place beef, onion mixture, picante sauce, cheese, guacamole, and sour cream in center of tortilla and wrap. Makes 5 servings. |
