SPICED NUTS 
1 egg white
2 (12 oz.) cans salted mixed nuts
1 tbsp. Homemade Pumpkin Pie Spice (see below)
1 tsp. water
1/2 c. sugar

In a mixing bowl, beat egg white until frothy. Add water. Beat until soft peaks form. Stir in nuts; toss to coat. Combine sugar and spice. Stir into nut mixture. Spread nuts evenly onto a greased baking sheet.

Bake at 325°F for 25 to 30 minutes, stirring occasionally; cool on waxed paper.

Makes 6 cups.

Homemade Pumpkin Pie Spice:

4 tsp. ground cinnamon
1 tsp. ground cloves
2 tsp. ground ginger
1/2 tsp. ground nutmeg

Combine all ingredients. Store in airtight container.

Makes 2 1/2 tablespoons.
