PINEAPPLE-SWEET POTATO PUDDING 
8 med. sweet potatoes, cooked and mashed
4 tbsp. butter
Grated rind of 1 lemon
1/2 tsp. salt
1 (16 oz.) can crushed pineapple, drained - reserved 1 c. syrup
1 c. heavy cream

Put sweet potatoes in large bowl; add butter, lemon rind, salt, the cup of reserved pineapple syrup and cream. Mix together and place in buttered casserole. Top with crushed pineapple.

Bake in hot 450 degree oven for 15 minutes.
