MINI CHEESE CAKES 
2 (8 oz.) pkg. cream cheese
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
Vanilla wafers
Strawberry glaze or pie filling
Cupcake liners

Mix cream cheese, sugar, eggs, lemon juice, and vanilla. Place cupcake liners in muffin tin, placing one vanilla wafer in each cup. Fill 2/3 full with cheese mixture. Bake at 350 degrees for 10-15 minutes. Cool until center drops. Cover each cheesecake with 1 teaspoon strawberry glaze.

Makes 24 miniature cheesecakes.
