CHINESE CHICKEN SALAD 
Shredded lettuce
Shredded cold chicken
1 pkg. Maifun (Chinese noodles)

DRESSING:

1/2 tsp. dry mustard
2 tbsp. sugar
2 tsp. soy sauce
1/4 c. salad oil
3 tbsp. rice vinegar

Heat about 3 inches of salad oil to 375-400 degrees. Break Maifun into small portions about 3 inches long. Dip a portion into hot oil (it will puff in a few seconds). Use 2 spoons and turn over so the entire noodle will cook. Remove as soon as it tops crackling and drain on paper towel.

Arrange lettuce in bowl. Add chicken and fried Maifun. Pour prepared dressing over and mix gently.
