SPATZEL (LITTLE DUMPLINGS) | |
1/2 lb. flour 2 eggs 3/4 c. water 1 tsp. salt Nutmeg 3 tbsp. bread crumbs 2 tbsp. butter Mix together flour, eggs, water, salt. Should be a sticky dough. Let stand 20 minutes. Bring medium pan of water to a low boil. Place a heaping spoonful of dough on to cutting board. Spread flat with a rubber spatula. With a sharp knife scrape little bits of dough into the boiling water. Cook about 1 minute. Remove with a slotted spoon, keep warm in the oven. When they're all cooked heat the butter in a frying pan, add bread crumbs and 1/8 teaspoon of nutmeg. Toss the spatzel in bread crumbs. Remove to serving dish. |
