EASY EGGPLANT 
1 lg. or 2 sm. eggplants
1 lb. cheddar cheese, sliced
Oregano to taste
Salt and pepper
1/2 c. flavored bread crumbs
Butter

Preheat oven to 350 degrees. Peel eggplant and cut in half lengthwise. Slice in 1/2 inch pieces. In buttered casserole dish, layer eggplant, cheese and spices, starting with eggplant and ending with cheese. Brown bread crumbs in butter; then sprinkle over casserole. Bake 45-60 minutes, covered. Dish may be uncovered for last 15-20 minutes. Eggplant will be fork-tender when finished.
