CHEESE CORN BREAD 
1/4 lb. bacon
1/2 c. chopped onion
2 eggs
2 (12 oz.) pkg. corn muffin mix
1 1/3 c. milk
2 c. shredded sharp cheddar cheese
1 tsp. pepper

Dice bacon and cook until crisp. Using 1/4 cup bacon fat, add chopped onion and saute until golden brown. Prepare packages of corn muffin mix according to directions, using eggs and milk. To this, add bacon, onion, pepper and 1 cup cheese. Pour batter into well - greased 13 x 9 x 2 inch pan. Sprinkle remaining cheese over batter. Bake at 400 degrees for 30 to 35 minutes. Makes 24 (2 inch) squares.
