1/2 c. shortening 1/2 c. brown sugar 1/2 c. white sugar 2 eggs 2 c. flour 1/4 tsp. salt 1/2 tsp. baking soda Cream shortening and sugars, add eggs and beat well. Add sifted dry ingredients and mix thoroughly. Chill. Roll 1/8 inch thick on floured surface. Cut with cookie cutter. Place teaspoon of filling on half of cookie. Top with remaining cookie. Press edges together with fork. Bake on greased cookie sheet. Bake at 400 for 10 minutes. DATE NUT FILLING: Combine: 1/4 c. sugar 1/3 c. water 1/2 c. chopped walnuts Cook over low heat until thickened, about 5 minutes, add nuts and cool. |
