LINGUINI WITH BROCCOLI AND BAY SCALLOPS | |
1 lb. fresh broccoli 1 lb. linguini 1/4 tsp. pepper 1 tbsp. olive oil 2 tsp. minced garlic 1 lb. bay scallops 8 tbsp. butter (optional) 3-4 tbsp. grated Parmesan cheese Salt to taste Cut broccoli into 1/4 inch slices. Blanch in boiling water for 2 minutes; drain well. Refresh under cold water and set aside. Cook linguini according to package directions and drain well. Toss with pepper and 4 tablespoons butter. Cover and keep warm while preparing scallops and broccoli. Heat olive oil and 4 tablespoons butter until very hot; add garlic and saute. Add broccoli and heat through. Add scallops; saute 3 minutes or until just done. Add salt to taste. Immediately spoon seafood mixture over pasta and sprinkle with Parmesan cheese. Serve at once. Serves 6. |
