SPICED-UP FISH 
1 clove garlic
1 tsp. cider or balsamic vinegar
1 lb. fish fillets
Salt and pepper
1 tbsp. dried onion soup mix
1 tomato
Cilantro
Lemon or lime juice

Sea bass, maki-maki, red snapper, halibut or salmon (steaks okay).

Mince garlic. Add vinegar. Cut fish into serving portions and season with garlic-vinegar and salt and pepper. Place fish in microwave dish and sprinkle with onion soup. Cover with wax paper and microwave on high 3-4 minutes. Let sit for 2 minutes and check for doneness.

Chop tomato coarsely. Chop 1/4 cup cilantro leaves. Combine and season with salt and pepper and lemon juice. Put fish fillets on plates and surround with cilantro-tomato salsa. Sprinkle with lemon juice. Serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
