BUTTERMILK BISCUITS | |
2 c. sifted enriched flour 3 tsp. baking powder 1/2 tsp. salt 1/4 tsp. baking soda 5 tbsp. shortening 1 c. buttermilk (or 1 tbsp. vinegar to 1 c. of milk) Sift flour, baking powder, salt, and soda; cut in shortening until mixture resembles coarse crumbs. Add buttermilk, all at once, and stir until dough follows fork around bowl. Dough will be soft. Turn out and knead on floured board. Roll 1/2 inch thick; fold over and cut double biscuits. Bake on ungreased cookie sheet in very hot oven (450 degrees) for 12 to 15 minutes. Makes 2 dozen. |
