CARRIE'S POTATOES 
3 tbsp. butter
4 med. baking potatoes, unpeeled, boiled and diced
1 1/4 c. grated Monterey Jack cheese
1 1/4 c. grated Cheddar cheese
1 med. tomato, diced
2 tbsp. minced onion
2 tbsp. chopped green onion
Salt
1/2 c. sour cream

Cook potatoes in butter over medium high heat in frying pan. Cook until brown and crisp, stirring frequently. Add cheeses, tomatoes, onions. Season with salt. Spoon onto plates and top with sour cream and serve.
