MANDARIN SALAD 
1 cucumber, peeled and seeded
1/2 tsp. salt
2 oz. cellophane noodles, soaked in water until soft, cut into 3" pieces (found in Chinese section of store)
2 eggs, beaten
1 tbsp. oil
1 rib celery, slivered
1 carrot, slivered
1 green pepper, slivered
1 chicken breast, cooked and shredded
1/2 c. ham, cooked and slivered

SAUCE:

1 green onion, minced
1 clove garlic
2 tbsp. soy sauce
1 tsp. red pepper, crushed (optional)
1/3 c. sugar
1/4 c. white vinegar
2 tbsp. sesame oil (found in Chinese section)
Salt (optional)

Sliver the cucumber and sprinkle with salt. Let stand 30 minutes. Place in colander and remove liquid from the cucumber. Place noodles in 1 quart boiling water and cook 1 minute. Drain in colander and rinse in cold water. In a small bowl, beat the eggs. In skillet or wok, heat oil. Add eggs and cook, stirring until done. Cut into slivers. In deep glass bowl, arrange in layers the noodles, cucumber, celery, carrots, green pepper, egg, chicken and ham. Combine all sauce ingredients until well mixed and pour over all just before serving and enjoy. Serves 6 to 8.
