CHILI CHEDDAR CORN BREAD 
2 c. yellow corn meal
1/2 c. all-purpose flour
1 tsp. baking powder
1 tsp. sugar
1 1/4 tsp. salt
2 1/2 c. milk
2 eggs
2 tsp. shortening, melted (or oil)
1 tsp. minced, dried onion
1 c. (4 oz.) shredded Cheddar cheese
1 (8 3/4 oz.) can green chili pepper, seeded, rinsed and chopped
1/4 c. chopped red pepper

Mix corn meal, flour, baking powder, sugar and salt together. Add milk, eggs and shortening; mix together. Add onion and let stand 5 minutes. Fold in cheese, corn, green chili peppers and red peppers. Spoon about 1/3 cup batter into greased and floured 2 1/2 inch muffin cups. Bake at 375 degrees for 25 to 30 minutes. Makes 15 muffins. This is a bread which is real good with barbecues.
