GRATED BROCCOLI WITH PARMESAN 
Stems from 2 bunches broccoli, about 6 c. grated
2 oz. Parmesan cheese, about 2/3 c. shredded
3 tbsp. olive oil
Salt
1/8 tsp. red pepper flakes (optional)

Peel and grate the broccoli stems. Shred the cheese. Heat the oil in a large frying pan over medium heat. Add the grated broccoli stems and 3/4 teaspoon salt and toss to coat. Cover, reduce heat and cook, stirring occasionally, until tender, about 10-15 minutes. Stir in the red pepper flakes and cook 1 minute. Stir in the Parmesan cheese and serve.

Serves 6.
