DRY MARINADE FOR SPARERIBS 
2 tsp. sugar
1 tsp. sweet paprika
1 tsp. coarse kosher salt
1 1/2 tsp. coarsely ground black pepper
1 (3 to 4 lb.) rack spareribs (in one piece)
1 small clove garlic, peeled and bruised

Combine sugar, paprika, salt and pepper in small bowl. Pat ribs dry with paper toweling. Rub ribs with garlic. Rub with dry mixture. Let stand 1 hour at room temperature. Wrap ribs in heavy-duty foil packet. Ribs can be cooked on grill or in oven. Baste with favorite barbecue sauce when ribs are done.
