BROCCOLI PARMESAN 
Two bunches of broccoli
2 tbsp. butter
1 tbsp. flour
1 c. milk
3 hard boiled eggs
Parmesan cheese
Cracker crumbs

Cook two bunches of broccoli until crisp tender; chop coarsely; saute in butter, season with salt, pepper if desired. Combine flour and milk, blend with broccoli. Add eggs, diced fine. Pack mixture into well greased custard cups liberally sprinkled with grated cheese. Dust tops with cracker crumbs. Bake in moderate (350 degrees) oven until browned (about 15 to 20 minutes).
