SPINACH WITH MUSHROOMS 
1/2 clove garlic, minced
1/2 c. sliced fresh mushrooms or 3 oz. can sliced mushrooms, drained
1 tbsp. butter
2 lbs. fresh spinach, chopped
1 tsp. lemon juice
Salt and pepper

Cook garlic and mushrooms in butter 2-3 minutes. Add spinach and cover. Reduce heat when steam forms. Cook 3-10 minutes. Add lemon juice. Season to taste with salt and pepper. Serves 4.
