SPINACH MUSHROOM SALAD 
1 lb. fresh spinach
1/4 lb. fresh mushrooms, sliced
3 hard-boiled eggs, chopped
1 bunch green onions, chopped
1/2 c. salad oil
5 tbsp. wine vinegar
1/3 c. sugar
1/4 tsp. dry mustard
1/8 tsp. pepper
8 slices bacon, cooked, drained and crumbled
1/2 c. crumbled Bleu cheese

Remove stems from spinach; wash leaves thoroughly and pat dry. Teat into bite- size pieces. Combine spinach, mushrooms, eggs and green onions in large bowl.

Combine oil, vinegar, sugar and seasonings in a jar. Cover tightly and shake vigorously. Top salad with dressing just before serving. Garnish with bacon and Bleu cheese.
