SPINACH-MUSHROOM SALAD 
6 slices bacon
1/4 c. salad oil
2 tbsp. wine vinegar
1 clove garlic, minced
1/4 tsp. salt
1/4 tsp. dry mustard
Few dashes ground pepper
4 c. torn spinach
1 c. sliced fresh mushrooms
2 tbsp. sliced green onions

Cook bacon until crisp. Drain, crumble and set aside.

In a screw top jar, combine salad oil, vinegar and spices. Cover and shake well.

In a salad bowl, place spinach, mushrooms, onions and crumbled bacon; toss lightly. Add dressing right before serving. Makes 4 to 6 servings.
