SPINACH - MUSHROOM SALAD WITH
CREAMY HORSERADISH
 
1 lb. fresh spinach
1/2 c. sliced onions
2 tbsp. water
2 tsp. white prepared horseradish (or more to taste)
1 c. sliced raw mushrooms
4 tbsp. light mayonnaise
1 tbsp. cider vinegar

Wash spinach leaves and drain well. Arrange in salad bowls with mushrooms and onions. Combine remaining ingredients; shake well until blended, or fork-blend smooth; spoon over salads. Makes 4 servings - 85 calories each.
