SPINACH, MUSHROOM AND RED PEPPER
ONION SALAD
 
1/2 lb. sliced mushrooms
3 tbsp. lemon juice
1/2 c. plus 1 tbsp. salad oil
1 red onion, sliced and separated
4 c. torn spinach leaves
4 c. torn salad greens (Boston, Romaine or other lettuce)
Salt and freshly ground pepper to taste

Marinate mushrooms in combined lemon juice and oil. Toss with onion, spinach and greens, then season with salt and pepper. Serves 6.
