EGGPLANT CASSEROLE 
1 med. eggplant (peeled, sliced thin)
3 kinds of cheese (Colby, Cheddar, Mozzarella)
1/2 lb. cooked shrimp, cut up
1 sm. can black olives
1 can tomato sauce

Dip eggplant slices in eaten egg, then cracker crumbs. Brown in skillet. Set aside.

In casserole dish, layer eggplant slices, cheeses, shrimp and olives. Add 1 can tomato sauce over mixture. Cook in oven 350 degrees until cheese is bubbly and brown. Let set 5 minutes before serving.
